Vicky’s Autumn Veg Soup

 Home grown veggie soup is great for warming up after a morning in the pottery – the flavour of soup depends on what my NPP (Non potting partner), who is an enthusiastic gardener,  brings in from the patch.  My quantities are a little random as we all have different tastes but this is the soup we’ve been making recently.

We love having people staying with us and we have become used to catering for all diets, so we always make our soup ‘free from’ which means everyone can join in! 

I sweat a large onion, a squash, some fresh ginger (not homegrown), a potato, a red chilli, a couple of cloves of garlic with some oil until the squash and potato are starting to soften.  Add a couple of pints of water and some salt and pepper and leave to simmer for as long as you can wait!!  If you want it smooth, whizz it up.

Sometimes I add some orange juice or coconut milk and maybe a bit of paprika…… 

Serve with a freshly baked loaf using your Terracotta Bread Pot!!
